I've posted before about this wine but just decided to let it sit and mellow.


went to check it today and it went from being brilliantly clear to opaque and murky looking :(

that's problem number 1.


number two is that it is a bit on the flat and flabby side taste wise. should I consider adding some acid blend and or oak?
 
eh, I'm gathering it got oxidized. which is frustrating as two of the batches were never opened other than at racking time.

Did it have a lot of headspace, or a not-tight bung? I aged a wine one time in a carboy with a "carboy cap" instead of a bung, and the wine oxidized. The carboy cap must have fit loose around the neck.

The wine needs to be topped up to within an inch or two of the bung in order for oxidation risks to be minimized.
