I am brewing my first weissbier on Sunday which will be my 5th batch. Got my starter going a day earlier than my last few starters so I can get a good cold crash and harvest plenty of healthy slurry. I'll fill my carboy tomorrow with tap water and treat with campden for the chloromine in my local water. I will ferment in a water bath at 62-65f to make sure a have a good balance of clove and banana flavors. 2 weeks and then to the bottle for conditioning. 2 weeks later I graduate with a Masters degree and I get to come home and crack open my first home-brewed hefe. The funny thing is that I'm way more excited for the beer than for graduation, lol.
I have a lot to learn and a lot to drink in the process. I love this hobby. Brew on, my friends!
