I know WL sells a mixed pitch of 001 and 002 but I like 007 better than 002. And the 007 still drops nicely.

I was thinking of simultaneous copitching 001 and 007, thinking that the 007 will help pull the 001 down. Perhaps you will say, why not try 090? It's a little too clean for me and I want the attenuation of 001 with more flavour.

Anyone tried this in an IPA? (Or anything else, too.)

I often co-pitch yeast and it works well. If you want the esters and flocculation from 007, then pitch it first, wait 24-48 and then pitch 001.

I have done this twice with these 2 yeasts and the 2nd time was recently. My pale came out a tad bit too dry for my tastes but I enjoy what it did to the flavor. I blend yeast a few times a year just to see what happens and most times it's good.
I've never tried pitching at different times though.
