I started homebrewing in 2020 after I left the International Wine Business university programme when the pandemic was hitting hard in my second semester. I decided I'll at least make use of the technical knowledge and turn it into a hobby.
I've been mostly making cider from homegrown apples in our area, usually just spontaneous fermentation (wild yeasts). I discovered that adding some fresh ginger juice before the fermentation begins results in a heavenly beverage.
I also made a couple of batches of mead from local beekeepers' honey. Experimented with junipers and pine needles as well to create an ultimate winter potion, but unfortunately, it got quite fizzy after bottling, so in the end, I got more of a refreshing summer drink.
I'm looking forward to exploring this forum!
