10 gallon batch

15 lbs. BestMalz Pils
9.5 lbs. BestMalz Munich
1 lb. Carafa III
1 lb. Melanoidin Malt
1/2 lb. Caramel Wheat 60L
156 mash temp single infusion 90 mins.
2 oz. Puterbaugh farms Legacy hops 7.8% AA 90 mins of boil.
Safeale S33
Fermented 68 F

OK so I know it's not technically a doppelbock. Wanted to try it with an ale yeast, and no decoction mash and see how it came out.

Well it's bottling day, and it's pretty damn smooth. A little sweetness, just a hint of roast, a little caramel. And that's warm and fresh from the carboy. Would have been interesting to have done a decoction mash and compare.

I split it into 1/2s and put the other carboy at 60F for a while after the initial 68 F ferment of a week. Then dropped it to 54 F where it sits.

I like that yeast it really rocks for a while then finishes fast.
