I've been trying to figure out what the hell to do with that WY3711 & WLP565 cake blend I have and thought about the Ginger Saison from Extreme Brewing. since going AG, I've been staying away from extracts (just to hone my AG abilities) except for starters. anyone have an AG version of the recipe?
 
I do. Maybe you'll have more luck with yours than I did with mine (thus the name you see in my signature).

Grain Bill
6.5 lbs 2-row Pilsner
1.5 lbs Gambrinus Honey
1 lbs Caramel Wheat

Regular, single-stage mash for light body.

Hop Schedule
1 oz. Hallertauer @ 60
1 oz. Hallertauer @ 30
1 oz. Hallertauer @ knockout
1 oz. Styrian Goldings for dry hopping in the secondary

Other stuff
~1 oz. grated fresh ginger @ 15 minutes
~1 oz. candied ginger @ 10 minutes
1 oz. bitter orange peel @ 5 minutes
1/4 tsp seeds of paradise @ 5 minutes
1 lbs Clear Candi Sugar @ 5 minutes

Wyeast French Saison 3711

The result was outrageously bitter because I was a moron and left the orange peel in the fermenter, instead of straining it out after the wort was chilled. Dumb. Anywho, good luck.

thanks! I like the addition of seeds of paradise! I had some good luck with them in a metheglin.
