I just got access to an amazing fresh organic peach harvest and I'm wanting to do a peach ale recipe I have but turn it into a wild brew, what bacteria should I use and at what point would I add it?
 
If you want much peach flavor, you want to add peaches after the wild beer is done. Read up and brew one for next year.
 
I make a sour mash peach Berliner Weisse that is pretty tasty. The souring process only takes a few days and then it's fermented clean so if doesn't contaminate any equipment.
