this is my first attempt at a saison. I looked at some recipes on here and came up with mine. I wanted something relatively simple with no spice added to see what the yeast would bring:

8 lb Pilsner malt
2 lb wheat
8 oz caramunich
4 oz belgian aromatic

1 oz Perle @ 60
1 oz french strisselspalt @ 30
1 oz french strisselspalt @ 5

Mashed at 148F for 70 minutes

Batch sparge

Added nutrient to the boil in the last ten minutes

Cooled to 75F

O2 for a minute then again at 12 hours

Rehydrated 1 packed of Danstar Belle Saison and pitched it. Yeast activity after 12 hours. It was putting off a foul diesel/ plastic like smell

Put on the brew belt and got temp up to mid 80's

After 5 days checked the gravity and had 1.004

racked to secondary.

will bottle in two weeks :mug:
 
I will definitely make this again. I will drop the caramunich and aromatic (both used because they were on hand with no future plan) I was initially thinking to decrease the wheat by half on first taste but once this was two month old it was great. Leaving the hops alone. Definitely a fan of Belle Saison yeast.
