First meads, any thoughts?

Left, Apple Pie Mead OG: 1.102 (24 brix)

1/2 cup of brown sugar
1/2 cup of cane sugar
1 cup of wildflower honey
1 tbl spoon of apple pie spice
.9 gallons of organic apple juice
1/2 a vial of wlp720 mead yeast


Right, Pineapple Mead OG: 1.090 (21.5 brix)


1/2 cup of brown sugar
1/2 cup of cane sugar
1 cup of wildflower honey
2 cans of crushed pineapples
1 can of pineapple chunks
.9 gallons of organic apple juice
1/2 a vial of wlp720 mead yeast

Awesome, what's apple pie spice? I'm starting an apple pie cyser and flavoring with cinnamon sticks, vanilla beans, ground nutmeg and fresh granny smith apples for a month when I rack into secondary probably in a week. I'm step feeding with a simple syrup of apple juice and brown sugar so I'm not sure when the yeast will quit.
 
Newbie here so take my advise with a grain of salt. But perhaps using fresh pineapple in the recipe would add superior flavor. A properly ripe, fresh pineapple has vastly superior taste to any canned variety, just a wonderful sweetness that seems to be lost when the fruit is processed for canning. Cutting a pineapple is a bit of a pain in the rear, but would be worth it in my opinion.
