I feel like a n00b again! I haven't brewed in a year and I'm stuck! Trying to come up with a hop schedule for my first brew in a long time and I would like your input.

I still have: All still fresh smelling and fine btw! (proper storage rules!)

~ 1 lb Sorachi Ace
6 ounces Simcoe
6 ounces Zythos Blend
6 ounces of Chinook
3 ounces Amarillo

Grain bill is 96% American 2 Row and 4% Caramel 30. Using Salale US 05. Est. OG 1.060

I used to only pretty much do Belgians. Simcoe is my favorite but want more than just that dimension. Looking for intense bursting hop flavor. Will you give me your opinion on a hop schedule?

Welcome back man! Here's one I put together for you which comes out to about 56 IBUs and sounds like an awesome combo (even though I haven't tried this blend yet).

.5 oz Simcoe & Sorachi Ace @ 15m
1.5 oz Simcoe & Sorachi Ace @ 7.5m
2 oz Amarillo @ flameout

I've read that Sorachi Ace and Amarillo can give out a piña colada type vibe when paired together. I actually have a recipe to do the Sorachi/Amarillo combo and then racking it on toasted coconut. If you're interested, I'll send it your way. The Simcoe should help balance the fruitiness with some piney goodness, but you could also sub some Chinook for some earthiness/dank as well. Let me know how this one turns out!
