Has anyone brought a yeast to its tolerance, then pitched 099 to finish? Looking to find out if it will change the flavor profile substantially.

I was planning on a 1 gal starter.

Did it change the flavor profile from the original yeast?

Cool. I have a Belgian that was much higher gravity than I expected. I pitched with a big started, but maxed the wlp500. Want to keep that flavor profile, but ferment out the last 20 gravity points.
