So I have a wine fridge I am going to use for fermentation and the top temp is 61. I basically always use wlp001 is this to cold to ferment at
 
Optimum fermentation temperature for WLP001 is 68-73°F. At an ambient temperature of 61°F, an average OG beer may reach 65°, and then begin cooling down as the fermentation slows. You would probably need a temperature controller to add heat for WLP001.
 
Ok. So since I'm using a wine fridge with a digital thermostat can I still use a plug and play temp controller
 
Yes. Turn the fridge temp down and plug into the controller. It will then only kick on when the temp goes above your desired variance.
