So I am starting an internship in Florida for the next 6 months and I don't want to stop brewing while there. I'm thinking I could just do 1 or 2 gallon batches and letting it ferment in the fridge. Depending on the fridge temp it will be a lager or ale. But I was wondering if there was any other way I could ferment 5 gallons batches instead? I have done the bucket with a towel in cold water, but depending on the space of my apartment I may or may not be able to do that.
 
I brew 5 gallon batches in the garage in Florida year round. I just use a fishing cooler, and put the carboy or fermenter in there with some ice packs. Only have to change the ice packs once day. Really easy, very low maintenance, not very expensive, and can fit in a closet
