Fassona Piedmontese is traditionally breed in Cuneo, Asti and Turin areas. The male examples are slaughtered as ox after they are more than 4 years old. When they are beef (in Italian laws after 2 years and before they are 4 years old) they are feed only with grass then, when they arrive at the age of 4 years, they eat only cereal flours. The female examples are slaughtered just before they remain pregnant of the first calf because in that period the large amount of hormones in the blood makes their meat more tender. This cattle is perfect for a roast beef. It must be cooked in the oven at 200°C for 15 minutes per kg or 20 minutes per kg if you want a medium cooking result.
