Here's my recipe, three cups of honey, and six cups of elderberry juice,1/2 teaspoon fermaid o, 1/4 of a mandarin orange peel and a packet of lalvin D47. With an end hydro reading of 1.060. (I did not have a hydro when I started the ferment, so no initial hydro reading.) The initial ferment was extremely energetic. And yes it is wonderfully sweet. Now it has been pointed out to me that it might not be done. Since this is my first time making mead, I have no idea what I'm doing. Any hints tricks and tips would be helpful.
