I'm gonna make some a version of Apfelwein tonight and was curious about the addition of some Orange Blossom honey. I'll be making a 5 gallon batch. Do I add honey in lieu of dextrose or meet in middle, 1# dextrose, 1# honey. I have 3#'s of honey I can use. Any recommendations of do &/or don't's? All replies greatly appreciated.

You'll make what's known as a cyser, or apple/honey mead. It is certainly doable, but I'd read up on honey fermentation, as there are additional pitfalls. Honey will certainly take longer to age than using simple dextrose, and if this is your first batch, I'd stick to EdWort's recipe. There's plenty of time for experimentation.
