hey all. I brewed a 2nd batch of the Bell's Two Hearted clone (https://www.homebrewtalk.com/f69/bells-two-hearted-ale-clone-close-they-come-91488/). I call it James River IPA.
Anyway, the first batch was exact to the recipe and was spectacular! We brewed it again, but couldn't get Centennial hops, so subbed in Citra. I adjusted the amounts to get the same approx IBUs using BS2.
Well, tonight I took a hydro sample and it is WAY different. Very citrusy. It's not bad, but just different.
Anyway, I still have to dry hop and the recipe would call for more Citra (original was all Centennial). I don't want to boost the citrus any more than it already is. What would you suggest? I have the following on hand:
German Select 5.3%AA 1 oz
Mt. Hood 5.9%AA 1 oz
Fuggles 5.7%AA 3 oz
Nugget 14.3%AA 1 oz

What say you, oh wise HBT friends?

This is a really good website that details the characteristics of the hops and gives some alternatives as well.

According to the site Cascade and Amarillo would be ideal. I usually dry hop with at least 2 ounces, so that may limit what you use as well.

I made an all-Citra Two Hearted clone a while back and it was a really pleasant surprise. What you're tasting now in the hydro sample is nothing like what it'll be in about 8 weeks.

Here's my notes on my little Two Hearted hop experiment, FWIW.

thanks for the info. maybe i'll just stick with the citra. like I said the hydro sample wasnt bad but it was wat different than the one with centennial.
cheers!
