The carbide drill bit from Brewhardware for drilling the hole for the steam slayer is a 40mm. That's smaller than 1 5/8". 41mm would be more like it. Will that drill run out enough for that bulkhead to fit?
 
I used 40mm and it fit perfect. IIRC - When I was doing mine Brewhardware was out of stock so I had to order the bit elsewhere. I asked Bobby at the time and he recommended 40mm.
 
I used a 42 mm bit I got from SSBrewtech, but I also bought my adapter there. It may be a different size than Brewhardware.

There's a bit of wiggle room there. Tungsten carbide bits in these sizes run a little wild so they usually make a hole about 1mm larger than rated.

No, SSbrewtech's bulkhead is the same as mine because they literally bought one from me and sent it to their factory to clone it.
