So we just started Ed's Apfelwein as a base for a berry cider. After we pitched the yeast, we noticed the Best Before Date: May-25-07. I've read that you guy's usually make a starter with old yeast to see if it is still good. But since mine is already pitched, do i just sit back and wait to see if it starts up after a few days? If it doesn't, can i repitch fresh yeast?
