Brewing a pilsner. I'm using Weyerman's floor malted bohemian pilsner malt which is slightly under modified. I was thinking about using a decoction mash for 2 reasons: 1) never done it and I have all Sunday to myself and 2) might help with the conversion.
I've already added 5 oz of acid malt to the 10lbs of base malt for pH reasons. That said, should I skip the acid rest and jump right to the protein rest?
In the future, if I do an acid rest, would I need to still add the acid malt?
Thoughts?
