Hey All! I had an idea to make a beer version of a Dark & Stormy cocktail and wanted to see what everyone thought of this. Calculations done in Beersmith:

5lb Pils
5lb Munich
1lb Dark Wheat
1lb Dark Candi Sugar
.5lb Caravienne

16IBU EKG @60
1oz Ginger Root @20
1oz Ginger Root @FO

Wyeast 3711

After ferment add Myer's Rum soaked oak spiral

Thoughts?
 
Personally, I would simplify the grain bill. I would sub the Munich for more pilsner, change the dark wheat to straight up wheat malt and sub the caravienna for special b or caraaroma and just use 0.25lb.

The special B and dark Candi will give you a lot of the Rum character you need. I would also make this a triple as opposed to a saison, the phenols from a saison yeast arnt something that remind me of a cocktail. But the rich esters of a triple do.k
 
Also a saison is too well-attenuated, you want a hint of the sweetness of the rum.
