5lbs Honey
1.5 Gallons Apple Juice
0.5 Gallons Grape Juice
S-04

I usually do this recipe with another half gallon of AJ and only 2.5lbs of honey. However I scored a sweet deal on honey so I was thinking about trying this recipe, comes out to 13%.

I brew 1-2 batches of cider each fall and open them the following fall so this will have 1 year to age.

My questions for the more experienced cider brewers are:

Will the hot alchohol flavor be gone after 1 year of aging?
Will an ale yeast like S-04 or Nottingham even take this to 13% (I like sweet so if it died out a little early I wouldn't mind)?

I doubt either of those ale yeasts will make it much past 10%, tho I've heard of Notty going as high as 11%. You might try step-feeding and/or SNA to help push it higher, but even so, 13% is a lot to ask from an ale yeast.
Regards, GF.
