Recently moved to all-grain using BIAB. Still dialing in my system as I missed my evaporation rate badly last time. Anyway, I'm planning on doing a small batch wheat wine next and wanted to see if this looks reasonable. It'll be targeted as a 2.5 gal batch

7 lbs. White wheat malt
3 lbs. 2 row pale malt
Hops:
60: 0.75 oz Columbus
30: 0.75 oz Centennial
20: 1 oz Cascade
10: 1 oz Cascade
1: 1 oz Amarillo

90 minute boil. Ferment with US-05.

Beersmith says this will come out around 10.5% ABV and 102 IBU.

Thanks for any feedback!

Hey Spaceman,

I don't have a lot of experience fermenting wheat beers, but I have done it with US05 and was not terribly impressed. I love US05 for pale ales and IPAs but will not brew wheat with it again. It provided that crisp clean taste but lacked the body and cloudiness of a good wheat beer. I will try the W1010 or W3333 next.

I am interested in hearing how this goes because I'm planning a wheat wine for the summer!

Cheers
