I'm looking to do an IIPA with Simcoe and Centennial late in boil and warrior as my 60 or 90 min addition. Planning on using Pale Ale Malt, some Crystal (40-60L most likely) and sugar to dry it out. I've used conan yeast before and it's pretty fruity so I'm not sure how this will turn out with Simcoe as I've never brewed with Simcoe before. My other options would be WLP007 or 090, just looking for a quick fermenter.
 
Simcoe goes great with Conan. It should be a pretty fruit forward beer. Simcoe gives some pine, but it definitely has some citrus as well
