Ok, so following the caramel apple cider thread, I brewed two 1 gallon batches last night. made invert sugar (2 cups sugar) with some of each juice and mixed together, then split a packet of nottingham between the two gallons.
Intend to brew both with same process, to try stovetop pasteurization for first time, and do a taste test for future batches.

Delsea Farms Honeycrisp Apple Juice AKA "Crispy Cider"
OG 1.090

Sage Valley Organic Unfiltered Apple Juice AKA "Crunchy Cider
OG 1.094

Will update as it develops.
 
Day1: Woke up this morning and both are bubbling, less than 12 hrs from pitching. Yay!

Crunchy has already exploded through airlock, attached a blowoff tube.
