I bought a kegging system this weekend and just racked a brew into my keg. The temperature of the brew was about 58 degrees at the time of the rack.

Can I now put the keg and the CO2 into the fridge (~36 degrees), set the CO2 at about 40 psi for one day, 20 psi for another day and then it be ready on the third day?

What impact will the brew have as it cools from 58 to 36 degrees?
 
Sounds good- purge the pressure and let it sit at serving PSI for awhile. I normally do 30 PSI for about two days and a day at serving pressure. Enjoy your draft brew :mug:!
 
purge the O2, and you're good to go. I usually do 2 days @ 30psi, then drop to serving for a couple more days. Play around and find what you like. As far as the beer cooling...no worries.
