On hand I have:
50lb 2 row
1lb 120L
20lb unmalted rye
20lb peated 2 row
1 oz citra
1oz chinook
2.25oz willamette
1oz US goulding
1oz czech sazz
3 packets T58
1 smack pack (mfg sept. 2011) wyeast trappist ale

Looking for suggestions!

You could make a lot of stuff, but I wouldn't hold out any hope for that 3 year old smack pack. That yeast is LONG dead.
