I picked up WL585 Saison III, WY3724 Farmhouse ale, and 2 oz of Calypso hops, none of which I have ever used before. I'm currently planning to use the hops in a batch of Saison that I'll split between the yeasts. Let me know what changes you'd make to my plan, or if you'd just abort all together. Thanks!

For 1 5.5 Gallon batch:
8# 2 row
1.2 # Home toasted malt, roughly 35*

Bittering hops to 30 IBU
2 oz Calypso at 5min
Yeasts as described above

OG 1.046
FG/ABV ???
SRM 11
IBU 35ish
 
I didn't love the Calypso. I suppose it tasted just like it was described: tart apple, earthy tea. But the beer was better after it faded out. Neither yeast had that earthy, farmhousey saisonicness I wanted. Maybe it would have been better fermented hotter.
