Just attaching the cap and putting nitro on cold beer won't do much, but I suppose if you shake the hell out of it for awhile there'll be some effect on the pour...

It might work if you put a dip tube on that fitting, partially fill the 2L with coffee, squeeze out the remaining oxygen, put the cap on, hit it will 30PSI of nitrogen, swap the gas disconnect for a liquid disconnect with an adapter and a stout faucet on it and pour the coffee until the pressure drops and needs more nitrogen.

Honestly, if you are that serious about nitro coffee I think it is better to just get a small keg, but if you go this route everything except the carbonator cap can be used in the keg set up. You'll only be out for the cap and those are worth having just for carbonated water.
 
Check out and fast forward to 5:04 if you want to get to the nitro cold brew part. It uses a nitrous whip cream dispenser not the quick carb cap but those guys on the cheap side so it could be an option.
