I started this batch 14 days ago, I have not racked to a secondary. It was fermented at about 70 degrees and it is doing fine. My question is I too a gravity reading and it is about 1/4 of the OG reading so looks like it might be ready... But I wanna know what the best next step is.. Do I bottle condition now? Or do I let this Tripel sit a while. I'm not in any hurry I have other beer that will be ready soon so I can leave this one for a while if it would be better...suggestions.. Thoughts??
 
If I were doing this beer, I'd leave it right where it is for another 2 weeks. With an expected ABV of nearly 9% it needs plenty of time to complete the ferment (which may not be done quite yet) and for the yeast to clean up the intermediate products. Then it will need some time to mature since it is rather high in alcohol.
