Reaching the end of assembling a ball valve outfeed for my fermentor. The tank coupler fitting I believe to be made from brass.

How confident can I be that modern brass fittings are lead-free?

Atleast in the US, they are typically stamped with some marking to denote that they are lead free...also would be on the packaging..and certain states require it...being in England im not so sure what your rules are.

A lot of brass still contains lead because its used in the manufacturing process to make it easier to grind and form the parts.

You can be relatively confident. But, just to be on the safe side, do a quick google search on pickling brass. Basically, you soak the brass fittings in a solution of white vinegar and hydrogen peroxide, if memory serves, and it'll leach out any surface lead. Very easily done.
