My first altbier (ale yeast, lager temps) is in the fermenter and by the time it's ready for bottling it will be in the mid 30's for over two weeks. I'm concerned about the yeasts ability to carbonate after being at this temp for an extended time.
Should I rehydrate a little dry yeast to add to the bottling bucket? OR
Will enough yeast be in suspension and wake up when I put the filled and capped bottles at room temperature for a week or two?
If I add the rehydrated yeast would I even need to go room temp with the bottles and just keep them cold?
Thanks
I realize I'm probably over thinking this.
