Ok, I want a beer still within guidelines but on the darker side of the hefe spectrum.. here is what I am thinking
Code:
Ingredients:
------------
Amt Name Type # %/IBU
5 lbs Pilsner (2 Row) Ger (2.0 SRM) Grain 1 45.5 %
5 lbs Wheat Malt, Ger (2.0 SRM) Grain 2 45.5 %
1 lbs Caramel Wheat Malt (46.0 SRM) Grain 3 9.1 %
0.50 oz Hallertauer [4.80 %] - Boil 90.0 min Hop 4 7.5 IBUs
0.50 oz Hallertauer [4.80 %] - Boil 10.0 min Hop 5 2.5 IBUs
1.0 pkg Weihenstephan Weizen (Wyeast Labs #3068) Yeast 6 -

So pils and malted wheat and then some carawheat to give it a bit more depth...

Thoughts?

The latter.. A Darker Hefe... According to Beersmith this is within Style at 7srm (6Gal batch)

Next will be a Dunkel (using the cake from this one)

I used Red Wheat in my last Hefe, and it was a few shades darker (4.0 SRM contribution compared to normal Wheat at 2.0) and added some really interesting complexity. Almost like the smooth maltiness you get in a New Castle or Fat Tire, but while maintaining the Hefe characteristics.

Anyway, I'd recommend possibly trying Red Wheat out sometime instead of normal wheat malt as well!!
