Hey all,
I want to brew a black rye saison.
I don't want much in the way of roasted flavor, just the color.
I Was thinking I would try this. Any thoughts?

10 lbs Pilsner (2 Row) Bel (2.0 SRM) Grain 1 51.3 %
3 lbs Rye Malt (4.7 SRM) Grain 2 15.4 %
2 lbs Carafa III (Weyermann) (525.0 SRM) Grain 3 10.3 %
2 lbs Chocolate Rye Malt (250.0 SRM) Grain 4 10.3 %
8.0 oz Caramel/Crystal Malt - 80L (80.0 SRM) Grain 5 2.6 %

I will probably just do all styrian goldings as the hop additions.
any thoughts? too much carafa 3? too much chocolate rye malt?
Also would add 2 pounds of table sugar to help dry it out a bit.
 
Too much carafa III. I have done a couple of black saisons and have used either 8oz de-bittered black or 8 oz of midnight wheat. Made them vary dark with very little roast flavor, just a hint in the aftertaste.

The chocolate rye is way to much also. a few oz is plenty.
