I've read around the forum about people keeping their Belgian tripels in fermentor a month or more, sometime 2-3 months between primary and secondary
I brewed a tripel a couple of weeks back, fermenting form 67-75 with WLP530. After 2 weeks OG is steady at 1.008. Is there any reason i should be keeping it in the fermenter longer? I do plan to let it sit in the bottle for a few months (basically until xmas).
why the very very long fermentation times?
