I really think this Revvy (Leffe) Blonde is done fermenting. 3 weeks in primary, I've tried raising temp and rousing the yeast somewhat. This beer seems clear now and sweet. I measures 1.020 whereas BS predicted a finish around 1.013. A bit disappointing. Some may like it when its carb'd but I think it's too sweet. A couple things I may have done wrong: added the sugar at flameout rather than waiting til high krausen... Used an old vial of WLP530 in my starter... too much O2? if that's possible.. I mashed at 156. If anyone has suggestions on how to dry it out without ruining it, I'm all ears...

If I did anything, I think I'd try the amylase as Steveg229 suggested and/or give it another week. Otherwise I'd call it done.

530 can be a slow attenuator. I've found that it likes to chew off a few gravity points when it seems like it is already done. Definitely leave it for another week.

3 days after adding the AE it is down to 1.016 and tasting much less sweet; in other words, better. My question is how far should I let it go and how far will it go if I let it... Beersmith says my FG should be 1.013...

Revvy's recipe is to finish at 1.10. Several other clones I've seen on the web refer to much higher FG. Leffe's website states 6.6abv which for me would mean stopping between 1.014 and 1.015.

Any thoughts?
