Beer yeast in a wine?

I've made a few batches of ed worts apfelwein and the wine makes no krausen. If I use a beer yeast will it make a krausen? I'm trying to make a small batch in a growler and will set up a blowoff tube if I need too
 
There is significantly less protein and unfermentable sugars in wine and fruit musts. I don't see a krausen building.
 
I never said I wanted it. I asked if it was based on the yeast or the content of what your fermenting. Just in case, I didn't want a mess and was going to pre-empt that with a blowoff tube.
