Yeah, we're all major gearheads.

OK, here's the premise... we'll be making a 10gal mash-in, then splitting it (50/50, not partigyle) between two beers. Since they're both experimental recipes, I wanna hedge my bets and get more mileage out of one try... but don't want to bother with a brew 'less it's 10 gal at least!

So the other beer will be a strong stout, with some added grains steeped post-mash to beef it up, targeting 1.065OG. Since we want this one higher, we'll plan to add honey and molasses to crank it up to 1.079OG.

This one, however, will be my attempt at a holiday beer. It's gotta stand on its own, since it won't all be spiced (mixed feedback on that technique from our group), and we want it to be ready more or less by Christmas/New Year's (planned brew date is 11/23, so not a lot of time for conditioning). We'll likely hit half of the brew during bottling with a spice tea; orange peel, clove, cinnamon, and candied ginger steeped in some of the beer, then added back into the bucket halfway.

So please, if you would, give feedback on this one. I've sized it, for convenience right now, as a 10gal batch. The grains are merely what I think will work both in the stout and winter heater recipe. The honey/molasses I just guesstimated at a 2:1 ratio. I have no real strong feeling about the hops right now, but I don't want something too sweet - just not heavy hops. Finally, I've never tried SafBrew T-58, but it sounds like it'll add something nice to this...
