Just looking for clarification. Could I make (mash) 10 gal worth of a wheat beer "base" and then split it into two diff batches and make a proper bavarian style hefe and an american wheat? Hefe would get noble hops and WLP300 while the american wheat would get american hops and a clean american ale yeast. Thoughts?

I see no reason why this wouldn't work. Both my hefe and american wheat are basically a 60/40 split of 2-row and wheat. Just make sure you mix the runnings well before you split the volume to boil. That way the gravity is the same in both 5 gal boils.
