Basic Ferm Chamber build question(s)

I'm converting an old Amana side-by-side into a ferm chamber (freezer side may eventually undergo further conversion to kegerator but not in the plan yet). My first question is about the door shown here: http://imgur.com/uTE84PC http://imgur.com/pVPbBAQ
I think that wire bundle is just for powering the ice/water dispenser on the front, is there any risk to cutting this? Do I need to do anything with the wiring after cutting to avoid shorting something out later?

I'm still in the early phases, I'll almost definitely have more questions when it comes time to change the wiring on the internal thermostat.

Pretty sure thats what its for. pop off the pastic hinge cover rmove the hinge, and I bet there is a plug under there. There has to be a plug somewhere for that
I vote unplug before hacking things up.
