I have a 1 gallon mead I forgot in the primary. It has been almost 5 weeks.(I really need to set alarms in my phone!) I used red star premier blanc yeast. OG was 1.126 Racked today it was 0.996. The chart says 17.06% ABV. It doesn't taste too bad, just slightly dry. I need to make it sweet, like a moscato (for my sister in law). What SG should I be looking for when backsweetening?
 
1 lb honey per gallon should be roughly .035 gravity points on your hydrometer readings
