I just recently started to reuse yeast and after some research I found the best yeast comes from topcropping. Since I dont use carboys, and use 6 gal stainless pots instead it allows me to easily top crop.
From my understanding, its best to skim off the brown sludge then taking the second skim. When using Flat top pots and blowoff, the blowoff shows me when its ready to skim(i see yeast coming up the hose) when I open the fermenter all the brown sludge is stuck to the top of the lid making clean yeast accessable.
