I was thinking about going with the setup below for my adventure into all-grain brewing.

Any thoughts or concerns about this setup? I also have a rack that I'm going to tier this equipment on as to be lift-free. Any input greatly appreciated as I'm ready to order this! Or if you have any better places for quality or prices please post!!!!

That seems a little expensive for aluminum pots. I would shop around before commiting to this.

Also, I have been brewing 5 gallon batches using 1- 10 gall SS brew kettle. I heat all my water in it then after I transfer the strike water to the mash tun, I keep heating the sparge warter to about 200F, then I transfer that to a regular 5 gallon cooler with a ball valve. I then can drain the wort into the kettle. So you might consider that as a way to save some money until you get it all together.

Or I could get two of these and put 1/2" valves in both. Just thermometer in the hot liquor one, and just a kettle screen in the brew pot. Well i guess a thermometer in brewpot too....

I can easily build a mashtun w/ maniford & valve from a 70 qt coleman extreme cooler.

You don't necessarily "need" a thermometer in your kettle. It's just a convience.
So if you want to save a little money for now skip it. You can always add it later very easily. Use that money to invest in a really nice digital thermometer
