Need some tips from oak barrel/sprial/cub agers. My brother and I made a bourbon. We aged our 125 proof corn whiskey for 5 weeks on a charred spiral. Now I'm looking to make a stout to age on the sprial and have a true family made bourbon aged beer. Question is what would be a good size batch to use with the sprial. I'm thinking no more than 3 gallon but not too familiar with aging on wood spirals. Also for style I'm thinking a nice big Imperial stout. any thoughts on that?
