My question is about aging a high gravity beer (strong ale)with abv of 9%-12%. I am playing around with some recipes but nothing set in stone... And I just want a generalized idea of basically, do you need age, bulk age, or not really age at all.. I did read the sticky on this form, but it didn't really hit a high gravity beer and an average time.
Now I am sure I will get different opinions, but I would just like to hear what everyone else kinda does..
