AG receipe from an Extract using Amber LME?

I have a recipe that my brew buddy and I brewed all the time when we did extract. Now that we are doing all grain we are having a hard time replicating this recipe. The base of the recipe was Amber LME and some steeped specialty grains.

Our attempts have come out too bitter and the color is too light. The extract beer was slightly malty with a nice hop finish from the chinook hops.

I am thinking maybe we should sub out some of the base with some munich malt, or maybe use marris otter in place of the pale malt?

Anyone know what the malters use in their Amber malt? I am pretty sure it is Breiss.

Here is the original:

5g Extract
OG - 1.056
FG - 1.013
14 SRM
25 IBU

7.5lbs Amber LME
8 oz Honey Malt
8 oz Caramunich Malt
4 oz Victory malt
1 lb Rice Extract Solids

2 oz Hallertaur @ 60
1 oz Chinook @ 20
1 oz Chinook @ 0

WLP028 Edinburgh Ale

Here is our latest attempt at an AG version:

10g AG
OG- 1.062
FG - 1.017
SRM 12
IBU 22


17lb Pale Malt (US)
2.5 lb Caramunich
2.5 lb Honey Malt
1.0 lb Vicotry Malt
2 lb Rice Extract Solids

Mash @154 for 60
Mashout @ 168 for 10

Fly sparge to hit pre-boil

1.5 oz Hallertauer @ 60
1.0 oz Chinook @ 20
1.0 oz Chinook @ 0

WLP028 Edinburgh Ale
 
According to my LHBS' specs, it is "Base Malt, Caramel Malt 60L, Munich Malt". No ratios.

That gives me a great starting point and is along the lines of what i was thinking.

I tried looking it up on Breiss's site and it was listed as "Proprietary"

Here is an updated recipe based on the above info on the LME: (I left out the Rice Extract Solids as I think they are fully fermentable and don't add to the beer)

10g AG
Eff - 72%

OG- 1.054
FG - 1.017
SRM 14-15
IBU 22


12 lb Pale Malt (US)
6 lb Munich Malt 20L
1.5 lb Honey Malt
1 lb Caramunich
1 lb C60
.75 lb Victory Malt


Mash @154 for 60
Mashout @ 168 for 10

Fly sparge to hit pre-boil

1.5 oz Hallertauer @ 60
1.0 oz Chinook @ 20
