Found this cream ale recipe on beersmith, any thoughts? Critiques? Suggestions? Second all grain batch and wanted another simple delicious 5 gallon batch, I scaled this down to 5.5 with beersmith was a 6 gallon


Batch Size: 5.5gal Style: Cream Ale ( 6A)
Boil Size: 7.50gal Style Guide: BJCP 2008
Color: 3.1SRM Equipment: Keg/10 gal cooler
Bitterness: 18 IBUs Boil Time: 60 min
Est OG: 1.047 (11.6° P) Mash profile: single infusion batch sparge
Est FG: 1.009SG (2.1° P) Fermentation: Ale, single Stage
ABV: 5.%. Taste Rating: 30.0
Ingredients

7lbs 12.2ozPale Malt (2 Row) US (2.0 SRM
2lbs 12.2 oz Corn, Flaked (1.3 SRM)
.76oz Saaz [3.0%] - First Wort
.76oz Saaz [3.0%] - Boil 30 min
1 pkgs American Ale (Wyeast Labs #1056)

Mash at 150degrees for 60 minutes

Efficiency showing 62.3 so that's low...

Thanks for the help
 
Personally, I would use 6 row instead of 2-row and I would mash at 148...

But thats just my opinion.

Why 6 row?
 
The main advantage of 6-row is its higher diastatic power in recipes that use a high percentage of adjuncts.

It's better at breaking down adjuncts such as corn and rice. It is also drier/less malty than 2 row.

As I said, it's just my opinion and experience when it comes to cream ales.
 
Updated recipe going by bier munchers but I cut it in half...let me know

5.5 lbs of 2 row us
3lbs of flaked corn
1lb of flaked rice
.50 oz willamette--60min
.50oz crystal--60 min
Safale us 05 one packet
Whirfloc

Mash at 150 for 90 min--two step batch sparge

Boil 90 min

Og 1.047
Fg 1.009

Any problems with this?

Any problems with this?

No problems with your recipe but for my taste the amount of corn is still a bit high. I usually use 2 lbs of corn and 1 lb of flaked rice with some 6 row and 2 row for the base malts for cream ales.

If you are opening new 1 oz packets of Willamette and Crystal hops then I would recommend adding the remaining 1/2 oz of each at flame out or 1-2 minutes left in the boil. I do this with my corn based cream ale recipe for 5 gallons and it turns out great.

This is what I use for BM's Cream of the Crops Cream Ale. It is very popular with my BMC drinking friends especially since I add in the rest of the hops at the end to give a small bit of aroma addition. 5 Gallon Recipe. I have probably brewed this 10 times and I am drinking this right now.

4 lbs of 2 row us
2 lbs of 6 row
2 lbs of flaked corn
1lb of flaked rice
4-8 oz of either carapils or crystal 10L (this is optional)
.50 oz willamette--60min
.50oz crystal--60 min
0.50 oz Willamette - 2 min
0.50 oz Crystal - 2 min
Safale us 05 one packet
