I brewed a Smoked Porter back at the beginning of November with an out of town friend. He's coming in town again this weekend, so we're going to bottle it. It's 6.4%, and it's been in primary since 11/12/11. We used WY 1028.

Do I need to add some fresh yeast to the bottling bucket or do you think I'll be okay?

To play it safe, should I crash cool to get it really clear and then add some S-04? If I go that route, how much should I add?

It's been like 9 months since I've bottled and I'm really not looking forward to it...

When I have a long primary and I'm concerned about how much yeast is still in suspension, I just intentionally pick up some extra yeast from the yeast cake when racking to the bottling bucket. It will eventually settle out in the bottle
