100% Wheat for BIAB Sour? No Boil?

Is it possible to use 100% Red Wheat Malt as base malt for a beer that's going to be pitched with ECY 20 Bug County

This is the Recipe I'm thinking of for 3 Gallons
-----------------
5Lbs Red Wheat Malt
1Lb C120
-----------------
NO HOPs
-----------------
ECY20 Bug County

I was also thinking about doing no boil and just do a 180 Degree pasteurization. What are your guys' thoughts on this?
 
Yes. The wheat has enough enzymes to convert itself, and you don't need to worry about stuck mashes with BIAB.

Any reason for the 120? I would just do the wheat and keep it simple.
