I'm making a Mainock today as a test batch and I have a good recipe I think is a good one. I am rehydrating some older yeast (dry) from a Mr Beer kit from my father-in-law about a year old. I made a starter of about 1.028 to kick the yeast up and see if it is viable. Also I am planning on steeping the grains in one gallon purified water and then sparging with another 5 cups at 170 deg. Boil for 90 minutes with two hop additions at 90 and 0 mintutes. I'm fermenting at about 64 deg for 14 days.
